Corn and Shiitake Mushrooms
A different side dish for Thanksgiving




2 Tbs. butter
8 oz. shiitake mushrooms, stemmed
16-oz. bag frozen corn,defrosted or 6 ears corn,
kernels removed
3 Tbs. chopped fresh mint
1tsp. soy sauce
Freshly ground pepper to taste


In Large Skillet, melt butter over medium heat. Add mushrooms and cook, about 2 minutes, stirring often, until softened,. Add remaining ingredients; cook, stirring often, 3 more minutes. Serve hot.
